2015 Holiday Butter Cookies


Giving homemade food gifts during the Holiday's is a nice way to show your family and friends that you love them and were thinking of them while you were making and packaging their gift. A batch of great tasting cookies is perfect for a gift. It's simple to make and everyone will love them, and… make and extra batch for yourself.  
The receipt below makes approximately 30 cookies, it’s so much better than the mixes that you buy in the store.  Kick it up a notch with some powdered sugar… Enjoy!

Recipe… makes approximately 30 cookies

1 Cup of Butter (2 sticks)
1 Cup of Sugar
3 Eggs
2 ½ Cups of Flour (all purpose)
1 Teaspoon Vanilla
½ Teaspoon Salt
Your favorite Jelly – (Raspberry is very popular)

Combine Butter and Sugar and blend well.  Add egg yolks only (save egg whites), then add Salt, Vanilla and Flour.  Blend until mixed well.

Roll into small balls and place on cookie backing tray and depress your thumb in the middle.  Brush with egg whites.  Bake at 400 degrees for approx. 10 minutes or until light brown.  After taking them out of the oven, place your favorite jelly in the middle.

Optional... after they cool you can sprinkle them with powder sugar.
